Bunny Foo Foo Cake

I have seen some interesting takes on a bunny cake in my life. Growing up on Easter there was always a rounded bunny cake with loads of dyed coconut and a terrifying plastic bunny face. I have created many bunny cakes over the years, from super simple versions with young students to more elaborate versions.

This simple take is as easy as it gets. You will need 2, 6” round cakes that you can cut out of a frozen baked 9x13 pan. I coated mine with white sugar crystals, but you can easily coat it with regular sugar or coconut. Make sure the cakes are nice and flat before icing so you don’t risk them breaking apart. 2- 6” Round Cakes Baked, trimmed flat, and very cold – whatever flavor you prefer

2- containers of store-bought vanilla icing – feel free to make homemade

2- Pepperidge Farm Milano Cookies

1 cup White Sugar Crystals

1 Cup White Chocolate

Pink Sanding Sugar

1 Large Marshmallow

Green and Pink Food Coloring

 

 

  1. Place White chocolate in a microwave safe glass and cook in 20 second intervals stirring in between, until chocolate has melted. Dip Milano Cookies as far into the chocolate as possible, place to cool on a sheet of parchment paper, and sprinkle the inner canal of the cookie with pink sugar. Set aside to harden.
  2. Cut a 1” section off of each cake slice to provide a flat edge to the circle. Set the small sections in a bowl and finely crumble. Once crumbled, add several dots of green food coloring and combine. Set aside.
  3. Spread icing on top of one cake circle. Top with second circle and stand cake up on serving dish or cake board. Continue to cover the cake with icing, coating all sides. Once covered, cover with a coating of Sugar Crystals. Add the Milano Cookie for ears.
  4. Cut your marshmallow in half and place on the cake for the face.
  5. Tint 3 Tbsp of leftover icing pink. Place into a piping or Ziplock bag and pipe the nose, whiskers and eyes.
  6. Take tinted cake crumbs and pack around the base of the cake. Feel free to add flowers, mini jelly beans, or extra garnish.
